Slow Cooker Chicken and Pasta Soup

Found this recipe from http://southernfood.about.com/ will be making it this week…can’t wait !!
  • 3 cans (10 1/2 ounces each) condensed chicken broth
  • 1 cup water
  • 2 cups diced cooked chicken
  • 1 can (14.5 ounces) diced tomatoes with juice
  • 1 cup chopped onion
  • 1/2 cup diced celery
  • 1/2 teaspoon dried leaf basil
  • 1 teaspoon dried parsley flakes
  • dash garlic powder
  • 1/2 cup ditali or other small pasta shapes, about 2 to 3 ounces
  • 1 cup frozen peas and carrots, thawed, or use mixed vegetables

Preparation:

In a 5 to 7-quart slow cooker, combine the chicken broth, water, cooked chicken, tomatoes, onion, celery, basil, parsley, and garlic powder. Cover and cook on LOW for 5 to 7 hours, or until the vegetables are tender.Cook the pasta in boiling salted water as directed on the package; add the frozen vegetables about 1 minute before the pasta is done. Drain. Add the cooked pasta and vegetables to the slow cooker. Cover and continue cooking on LOW for 30 to 60

Shredded Buffalo Chicken in the Slow Cooker

For my brother’s 30th birthday party I decided to make some Shredded Buffalo Chicken in the slow cooker. If you want a really simple way to spicy up chicken and have a lot of food for guest this is the recipe to use. Since my brother was having 40 people over for his birthday I made 8 pounds of chicken.

6 lbs boneless chicken Breast
2 lbs boneless tighs
2 bottles Frank Red Hot
2 packages of Ranch Powder Dressing
1/2 stick of Butter

Set up the slow cooker and set it to low.

Add quarter of the bottle of Frank’s Red Hot and then the chicken. I added the breast, then tights, then breast, more red hot, ranch powder breast, tights and then the rest of the first bottle of red hot and ranch powder.

Cover and let this cook for 6 hours. Using two forks shred the chicken until there are no big clumps left. Add the second bottle of  Frank’s Red hot and the 1/2 stick of botter and mix everything up. Cook for another 2 hours and serve with Blue cheese and rolls.

This makes for a simple recipe to make when friends are over to watch football on sunday. you could also spice this up by adding your own hot sauce or hot peppers to the slow cooker.

Crock Pot Ribs

Being a single guy, having my own house, and a full time job sometimes when you come home from work you don’t want to think about what to make for dinner. One way i figured out how to solve this problem is using a slow cooker to cook food all day long while I am at work. So when I come home I have a meal almost ready to eat.

So today I will share my Crock Pot Ribs. This would be something i would start the day before by getting the rub together and defrosting the ribs. I like my ribs spicy hot so i use

Ribs Rub
2 Tbs Ground cayenne pepper
2 Tbs Chili Powered
3 Tbs ground garlic
black pepper
salt
1/3 cup packed brown sugar
Two or Three shakes of my special dried pepper flakes (contains habanero peppers, cayenne peppers, and Tia peppers)

Again create this rub to your liking. I like to apply the rub to the ribs the night before. So all those flavors get do their magic with the pork. I also put a couple splashes of Worcestershire on each of the ribs as well before putting them in the fridge.

In the morning turn the Crock pot on low. I like to coat the bottom of the crock pot with BBQ sauce but you can just place the ribs in meat side up.

I like to cut up some fresh hot peppers and some garlic and put that on each layer of ribs. Once that ribs are in close the top and cook on low for about 8 hours. When you get home from work they will be done and will be so tender and juicy.
